Ingredients:

  • 4 pork steaks or pork shoulder chops (about 1 inch thick)
  • 1/4 cup soy sauce
  • 1/4 cup calamansi juice (or lemon juice)
  • 1/4 teaspoon ground black pepper
  • 3-4 cloves garlic, minced
  • 1 medium onion, sliced into rings
  • 1/2 cup water
  • 2 tablespoons cooking oil
  • Salt and pepper to taste
  • Optional: a pinch of sugar (to balance the flavors)

Instructions:

  1. Marinate the Pork:

    • In a bowl, combine the soy sauce, calamansi juice (or lemon juice), black pepper, and minced garlic. Mix well.
    • Add the pork steaks to the marinade, ensuring they are fully coated. Marinate for at least 30 minutes or up to 2 hours for more flavor.
  2. Pan-fry the Pork:

    • Heat cooking oil in a large skillet over medium heat.
    • Remove the pork steaks from the marinade (reserve the marinade for later) and fry each piece for about 3-5 minutes per side or until browned. Remove the pork and set aside.
  3. Cook the Onion:

    • In the same pan, sauté the onion rings until they become soft and translucent. You can add a bit more oil if necessary.
  4. Simmer with Marinade:
